9/04/2008   Kimchi Fried Rice

I had this for breakfast and lunch. This is yummy if you like kimchi. The kimchi in the fridge is getting sour so I made kimchi fried rice. Here's what you'll need.

1 part kimchi (starting to ferment is better)
2 parts rice (leftover, cold)
kimchi juice
salt and sugar to taste
sesame oil

Fry chopped kimchi in oil. Add sugar and salt. Mix in rice. Add kimchi juice and sesame oil (1 tbsp. per cup of rice). Total cooking time is about 10 minutes. Top with fried egg.

I think of Hyeong and his family whenever I make Korean food. He used to invite me over at least 3 times a month and we'd eat dinner together. I miss those times. It's been 3 months since I last saw him. He emailed last week but has not responded to my reply. I don't want to call because he might feel like he has to invite me over. I don't know how to feel or what to think about this.

I had to search kimchi on wikipedia because I didn´t know what was it. Near my house there is a Filipine´s product shop, I´ll ask there. Thanks James.

A Filipino store is probably not a good place to find kimchi. You'd have more luck at a general Asian supermarket.
